Smoothies & turkey burgers...

We had the usual turkey sandwich, apple, almonds & protein bar for our
lunch boxes...

Jeremy is run down tonight. His throat is really bothering him. (while
mine is progressively getting better).. Praying for some solid rest
and restoration!! <3

The Breakfast Nook...

We brought this stool from home over the weekend, so Jeremy pulled up
to the extended-counter-space-thing we have and called it 'the
breakfast nook' this morning... Haha.

I love that man!
More thankful for him everyday!

Did I tell you he went grocery shopping for us again this week... Yep!!

No fancy dinners today.. We made due with PB&J for lunch, stirfry
leftovers for J's supper and beans & rice for mine.. Nothing fancy,
but it works. :)

Pumpkin Pie Cupcakes

I made these pumpkin pie cup cakes.  They are way more like individual pumpkin pies than cup cakes though, since they are so moist and dense.  I used fat-free half and half for the cream, and used whole wheat flour for the flour.  With these changes these are virtually fat-free (only fat from the eggs), and are very good.  They weren't amazing though, but for the calories they are perfect.  I topped mine with a little whipped cream, but cream cheese frosting would be delicious for a more decadent dessert.  These are a great, light Fall dessert that you need not feel guilty for eating.

Avocado Pasta

This was an experiment, because I ended up with several extra avocados this week.  It actually turned out really well.  I thought it was a great healthy and delicious summer dinner (yes, while the rest of the country is experiencing Fall weather it still feels like Summer here in New Orleans).  My pantry is running low (tomorrow is my grocery shopping day), so I didn't have much extra on hand to throw in here, but if I was planning this I think I'd definitely add some black beans and chopped fresh tomatoes.  This serves 2, because I didn't want to make too much and have the avocado brown and ruin it, so increase your portions as necessary.

-1/2 lb pasta, cooked al dente and rinsed with cool water
-1 avocado
-1 clove garlic
-3 Tbsp mayo
-2 Tbsp lime juice
-1/2 tsp salt
-1/2 tsp pepper
-1/4 tsp cayenne
-1/2 bunch cilantro
-couple of handfuls of spinach leaves

Combine avocado through spinach in a blender or food processor, and puree until smooth.  Toss with pasta, and chill at least 1 hour prior to serving.

Planning late...

I like to have planning and shopping done by Sunday night, but that is
not the case this week with all of our weekend excursions...

I'm working on filling in the blanks and Jeremy said he'd go to the
store for me after school tomorrow since I work until 10pm... <3

Back at Dixie Trail...

Cracker Barrel with Cade and S&S...

Their portions are so big, we all ordered fromthe kids' menu... I had chicken fingers (obv my go-to!) and fried okra and J had chicken & dumplings... Yummy!

Haha.. Or at least that's what I was thinking when we bought it.. Apparently Jeremy had another idea! ;)

I was going to do it myself after lunch today, but when he came home for the afternoon, I let it go, so he offered to take care of it! Love it! :)

Early Sunday...

6am coffee and cereal...

Jeremy had to work all morning, but then he was able to meet me at home for lunch after church... So we had leftover alfredo noodles and a niiice nap!:)


And then we had turkey sandwiches with the giant avocado for supper...

(I had to work and he had to get going on work and homework)... <3

Saturday workday...

B: Eggs & toast

(nothing new- except they're on bread instead of wrapped this week:)


S: noodles with Alfredo & chicken...

No particular recipe for this, I just cooked the noodles & chicken separately, then mixed them together with the alfredo sauce and added italian bread crumbs on top... Then I put it in the oven for 20 minutes.

When I tasted it, I thought it needed a little something, so I added parmesan cheese. I think next time I might mix in some feta and maybe some sundried tomatoes to give it more flavor.

(I'd also cut the chicken into smaller chunks and season it with something... Maybe basil or all spice while it's cooking)


J & Mo were working on their project, so I dropped off meals to them on my way to work...

They were happy.
I was happy.
Certainly I get it honest, but it's my favorite to get to share a meal!

Baked Penne recipe

Baked Penne 
(This is a post from my friend Shannon's blog.... this looks so yummy, I sure do want to try it!!!)


This is my take on baked ziti.  I used penne, not because I like it more, but because it tends to be easier to find in whole wheat rather than other pasta shapes.  The meat here is purely optional, I made two trays with meat (a combination of ground beef and Italian turkey sausage), and a tray with just cheese, and they were all equally good.  Jeremy and I both loved this, it has the great flavor of lasagna, with a few less steps, and a shorter cooking time.


-1 lb whole wheat penne, cooked al dente
-1 lb meat, either lean ground beef, or Italian turkey sausage, or a combination of both
-32 oz marinara sauce (homemade or jarred)
-24 oz part-skim ricotta cheese
-1 egg
-1 lb part-skim mozzarella cheese, shredded, divided
-1/4 cup parmesan cheese, shredded


Cook meat over medium heat.  Drain.  Combine meat and sauce.  In a separate bowl, mix together ricotta, 8 oz mozzarella, egg, 2 cups of the meat sauce, and the cooked penne.  Spread mixture into a greased 13x9 pan.  Top with remaining sauce, then with remaining mozzarella and parmesan.  Bake at 375 for 30 minutes.

Got to be the cook on my first night of volunteering with Clubs in the City!!

There's much to tell about this night... the short, short version: we had insufficient pots/pans/amount of food and I really didn't think we were going to be able to feed these ten hungry kids and five adults. But God did. He made it happen. Kinda wonderful!!
