Jeremy had a meat biscuit & coffee atBaked downtown :)

by afternoon our water supplies were low

lettuce wrapped sushi 'snack'
He and Mo had lunch at a French restaurant downtown, but I waited until we got on the road, so I just got some sushi and we grabbed a gallon of water to keep our bottles full for the duration of the trip... Haha.. Or at least that's what I was thinking when we bought it.. Apparently Jeremy had another idea! ;)

Saturday workday...

B: Eggs & toast


L: turkey sandwiches 
(nothing new- except they're on bread instead of wrapped this week:)


S: noodles with Alfredo & chicken...

No particular recipe for this, I just cooked the noodles & chicken separately, then mixed them together with the alfredo sauce and added italian bread crumbs on top... Then I put it in the oven for 20 minutes.

When I tasted it, I thought it needed a little something, so I added parmesan cheese. I think next time I might mix in some feta and maybe some sundried tomatoes to give it more flavor.

(I'd also cut the chicken into smaller chunks and season it with something... Maybe basil or all spice while it's cooking)


J & Mo were working on their project, so I dropped off meals to them on my way to work...

They were happy.
I was happy.
Certainly I get it honest, but it's my favorite to get to share a meal!

Burrito Pizza

...not to be mistaken for taco pizza.. :)

Refried beans + salsa
Ground chicken with taco seasoning
Mozzarella cheese
Cilantro
(& if I'd have had more avocado, I certainly would have added that too!)

Pretty good if I do say so myself!;)

Although next time I think I'll stick with the burrito roll-up style..
This was super hard to cut & eat... But it worked, and we had full,
happy bellies another night!:)

3-in-1...



We had a long day ahead, so I made us "full breakfast" this morning. (We call eggs, potatoes & toast 'full breakfast') ...

Then I simultaneously made our lunch and packed our supper leftovers so J could stay at school all day and night until I picked him up after work around 9:30!

He has so much to do, it's ridiculous!!

What a ride this grad-school-life is!!

B-L-D...

When we had marriage counseling with Karen Holt, Jeremy said that his biggest marriage expectation was "B-L-D"!! Breakfast, lunch, and dinner.. Haha!:)

and turkey sandwhiches [on the way to work] for supper :)
We had supper for lunch & lunch for supper.. because of the work schedule, it worked better to 'cook' for the middle meal and do our bag-lunch-thing for supper. :) :)

Keeping it simple...

I Switched it up for lunch today too! It wasn't my intention, but I got so caught up enjoying the morning before work (& writing about Wednesday's meals) that I only had time to make these simple PB&J
sandwiches...





The day was long and good. I was able to pick Jeremy up on my way in from work again, which I love. Then I made us some yummy beans and rice and chicken (seasoned with cumin)... 

He was happy. I was happy. And there are leftovers, so that's a bonus!:)




After supper we headed back to the school for him to finish his Nolli map. We had also heard there was a Campus Crusade meeting at 8pm, so I was considering going to that... (I did and it was excellent! There's more to the story, but I'm definitely hoping to get involved & help in some way!) When I came back to the studio around 9:30, Jeremy was just finishing up his map! We sprayed it, had some snacks brought in by the upper classmen (are they still called that in grad school?) and then we headed home for some goood rest!

What a day! :)

I haven't decided yet if I'll stick to the plan and do stir-fry for Friday night (I go in at 4:00) -or if I'll just make some more chicken to go with our leftover beans & rice...

Leftovers...

I worked until 6 and got to pick up J from school on my way home..

Thankfully I anticipated being tired and hungry after the long day, so I had already planned on leftovers. I didn't think I'd feel like it, but I knew I had almost half an eggplant left to cook too if need be..

Jeremy was his usually patient self and sat in the kitchen (on the step bc there's no chair) to hang with me and tell me about his day. (He also posted some project pics to his flickr!:)

The eggplant and leftovers hit the spot! This time we dipped the eggplant in pesto & tomato sauce and it was delicious! (marinara may have been better, but I didn't splurge on that... no matter because 
tomato did the trick:)...




And guess what else.. I tackled allll the dishes while Jeremy got started on his work. All of them. Done. Loading the dishwasher never held so much gratification!! 

There were so many they took up the whole clean side of the sink AND our entire counter space (which isn't much, but still!;)





By the time supper & dishes and 10 minutes of snuggling were through it was 9pm, so I treated us to some hot tea and pulled up next to him on the couch [while he finished reading for school] for a few minutes of down time before bed. <3

Chicken with artichokes...





From my favorite cookbook ever..

We love this meal... It's worked every time I've tried it and it's pretty simple!
I do everything the recipe says except I do skip the onion.. & salt & pepper.. I'd usually rather add those later:)

We had it with noodles tonight. The really thin ones.. Also good with rice..

I work every day for the rest of the week, so I'm praying for some easy stuff to fill our tummies! <3

Turkey burgers



Got a cookbook from the library, went to Trader Joe's for groceries, and made my first turkey burgers.... and bake potato fries... my favorite comfort-food ever! <3


J loved them which made my day!
