Not sure how this word is actually pronounced, but when I was growing
up staying with my Italian grandma in NY each summer, I always asked
for "yunkies"!!
She made them for real from leftover mashed potatoes... But this day,
we made them the easy way! Cheap aaaand easy. And so yum! :)

Blueberry pancakes...
1 cup flour
1 tsp. baking powder
1/4 tsp. salt
(mix)
1 egg
1 cup milk (almond milk or soy work too!)
+ 3/4 cup fruit of choice (BBs, diced banana or apple...)
YUM!!
Makes 5-6 pancakes!
(four servings for this little team if two:)

thrifty eating
Working on lowering the average cost per meal per week/month.
While remaining mostly healthy (aka, not buying junk food just because it's cheaper)
